Maple Season’s Premature End

Sometimes the maple season comes to a halt because the day-time temperatures aren’t warm enough. Sometimes, it’s because the evening temperatures are too warm; Both conditions cause the sap to stop flowing. Sometimes the season stops due to a lack of energy on the producer’s part. And sometimes Appendicitis breaks out . My season ended prematurely this year due to this mysterious human organ that no one seems to understand its origins. At least, I got to make some of that January syrup before February set in, which brings me to one conclusion, “Tap ’em early, as soon as you can, because you never know how the season will go.”
