WHAT’S GOING ON IN THE FOREST?
Well, I tapped my trees on Monday, January 6th. Later that night, they ran over 1 gallon per tap at about 2.6% sugar content or 32 gallons of sap to 1 gallon of syrup. I realize it’s awfully early, but the forecast later in the week for central Ulster County is calling for highs in the upper 50s with some nights barely freezing. In reality, I could have tapped last week, but December is pushing it too close to Christmas. I figured I might as well make some syrup. I’ve tapped in January in the past, but normally it’s sometime in mid-February. We’ll see how it goes.
