WHAT’S GOING ON IN THE FOREST?

A fellow member of my rod & gun club let me use his walk-in cooler this year to hang deer in. It’s basically an insulated room with a regular AC unit installed. The AC unit is tricked out to cool to 36 degrees or so. I have to say that hanging deer for 7 to 14 days does result in better tasting meat and seems to be worth it. All beef–as far as I know–is aged. To fairly judge venison, perhaps it should be adequately aged too.
